Food intolerances and allergies can be confusing to navigate. It’s important to seek specialist dietary advice from a dietitian to effectively support their management, ensuring the diet is balanced and including the wide range of nutrients needed as well as improving quality of life and enjoyment of meals. Evidence-based accurate allergy testing is crucial, some of the available allergy tests have no scientific basis to them and can be extremely misleading.
Food Allergies are caused by the immune system reacting unusually to specific foods. Allergies can be categorised into a number of different forms: IgE mediated, Non-IgE Mediated and Mixed IgE and non-IgE-mediated. Depending on the form of allergy, some allergy responses can be immediate, but delayed and chronic reactions can also occur.
Food intolerances differ from food allergies as they do not involve the immune system. They occur when the body is unable to breakdown a certain component of food, which can be related to an insufficient amount of a particular enzyme or reactions to additives or naturally occurring chemicals in certain foods, They can present with a wide range of symptoms, with both immediate and delayed onset. Common food intolerances and sensitivities include lactose, gluten and certain food chemicals and additives (histamine, salicylates, caffeine, alcohol, monosodium glutamate, sulphites).

When removing foods due to concerns around intolerances or allergies, Clare ensures her clients' diets are always balanced to reduce the risk of nutrient deficiency. Coeliac disease is a serious autoimmune condition where the body attacks its tissues within the gut in response to consuming gluten. Gluten is a protein found in wheat, rye and barley. Symptoms can vary hugely, with some people not experiencing any at all. However, the only treatment is a strict gluten-free diet.
Clare works with her clients to ensure that their diets are not only completely gluten free but also, that meals are balanced, enjoyable and satisfying. Education around hidden sources of gluten, cooking with naturally gluten free flours and high fibre grains and dining out advice are key aspects of treatment.

FPIES is a form on Non -IgE mediated food allergy, affecting infants, children and adults. Research indicates that FPIES in adults is frequently under recognised . Symptoms of FPIES include profuse vomiting and other gastrointestinal issues such as diarrhoea and abdominal pain. Onset of symptoms typically occurs 1-6 hours after ingesting the allergen. These allergic reactions can appear to be very, serious and frightening. However in many cases it is not lifelong and may be outgrown.
Clare helps her clients and their carers create meals that are varied, balanced and enjoyable, without inclusion of the allergen that is problematic for them. Eosinophilic Esophagitis (EoE) is a allergic condition that affects the oesophagus causing it to become inflamed resulting in swallowing difficulties, pain, reflux and impaction of food. It can be a highly debilitating condition that if left undiagnosed significantly impairs quality of life. It is diagnosed with a biopsy of the oesophagus.
Elimination diets can form an effective part of the treatment of EoE. These diets should be supervised, to ensure dietary balance and adequate intake of important nutrients. Clare works alongside other medical professionals to support her clients and safely tailor an elimination diet that enables them to maintain a healthy, happy relationship with food. Support around practically implementing dietary support, with cooking lessons and suitable recipes is provided as part of Clare’s care.

Mast Cell Activation Syndrome (MCAS) is a complex, poorly understood condition that has only been recognised in recent years. Diagnosis can be lengthy and complicated, in part due to lack of understanding and awareness of the condition. As mast cells are located throughout the majority of the body, symptoms can vary widely and impact all body systems and tissues, having a huge impact on well-being and quality of life. Every person with MCAS is unique and experiences their own individual triggers and symptoms.
There are a wide range of dietary issues associated with MCAS, as elimination diets to determine triggers and restrictive diets to manage symptoms are often used. A large majority of people with MCAS use dietary strategies (including low histamine diet, dairy-free, gluten-free, low salicylates, low oxalate & low FODMAP diet) to manage symptoms, often leading to nutritionally inadequate diets, confusion and stress and anxiety at meal times.
Clare works with clients with MCAS to provide bespoke, evidence based advice and support with identifying their specific dietary triggers and excluding them in a safe way without compromising the nutritional quality of the diet and enjoyment of food. Advice and support around appropriate supplementation and staged, safe reintroduction is also emphasised, accounting for anxiety that is very commonly experienced.. Alongside clinical advice, Clare can also provide practical support with cooking, shopping and meal planning, to ensure meals are not only providing all the nutrients needed for physical and mental wellbeing, but are also delicious!
